What Is Speciality Coffee?
There are many definitions for ‘speciality coffee’ – the simplest is that speciality coffee is a term that refers to the highest grade of coffee available.
But here at Capital Coffee, we prefer the broader definition used by the Speciality Coffee Association (SCA):
"Specialty coffee can consistently exist through the dedication of the people who have made it their life's work to continually make quality their highest priority. This is not the work of only one person in the lifecycle of a coffee bean; specialty can only occur when all of those involved in the coffee value chain work in harmony and maintain a keen focus on standards and excellence from start to finish. This is no easy accomplishment, and yet because of these dedicated professionals, there are numerous specialty coffees available right now, across the globe, and likely right around the corner from you."
The SCA highlights five people who play an essential role in the existence of a speciality coffee.
First, the coffee farmer.
The farmer uses their years of expertise, often passed down through generations, to get the best from their land and coffee plants, and produce the finest beans. At Capital Coffee, we source our beans from: John to add info about countries, specific farms, how you choose it, who certifies it etc.
Second, the green coffee buyer.
At Capital, we have worked with brokers in London and internationally for decades, it helps us concentrate on what we are good at, roasting coffee and providing service to commercial and retail customers. We have personal relationships with the people that buy the coffee and with the farmers and cooperatives who supply us.
The brokers play a very important role in the supply chain, they ensure the farmers have sustainable income and help us keep a regular supply of green coffee. Most importantly, we can be certain that the coffee is coming from an ethical background and is of excellent quality. It also helps smaller roasters like us to provide a very wide range of diverse coffees.
Third, the roaster.
Our Master Roaster Mark has been with Capital Coffee for 15 years and roasting another 20 years before that, in his lifetime he estimates he has roasted 2.6 million tonnes of coffee.
He is responsible for using the latest technology and our expertise to roast green beans to exactly the right point, bringing out all the delicious flavours you taste when you drink your morning coffee.
Fourth, the barista.
As you are reading this, that’s probably you! How you make your coffee is a vital step in the speciality coffee chain. We recommend using an Aeropress to make your day-to-day filter coffee.
Fifth, the drinker.
